Waste not, want not

A LUX­URY menu has re­duced food wastage by 84 per cent at a Syd­ney hospi­tal.

The Mater Hospi­tal in­tro­duced ho­tel-style room ser­vice a year ago. The NSW-first scheme al­lows pa­tients to or­der restau­rant-style meals be­tween 6.30am and 7pm.

The Mater’s chief ex­ec­u­tive of­fi­cer Ja­nine Loader said the new menu has “way ex­ceeded ex­pec­ta­tions”. The Mater used to col­lect three in­dus­trial-sized bins of waste a day.

“Af­ter we im­ple­mented, we went down to half a garbage bin. You can’t be­lieve how lit­tle waste there is,” she said.
