The wine list is one of those book-like com­pi­la­tions so un­wieldy and dis­tin­guished that only se­ri­ous wine bores could waste much en­ergy on it. We take the route of ask­ing Mor­ri­son to se­lect wines by the glass to suit our cour­ses. Af­ter start­ing with Aus­tralian Cu­vee Guil­laume sparkling (the cham­pagnes, up­wards of $25

a glass, are be­yond our bud­get), Mor­ri­son un­earths en­joy­able, mostly do­mes­tic wines

in the $15 a glass re­gion. Un­lim­ited fil­tered still or sparkling wa­ter is com­pli­men­tary, set­ting a prece­dent that should be­come

the norm at this level.
