As a dish be­gins to take shape in my mind, I test my ideas against it. Will the dish have con­trast­ing taste, tem­per­a­ture and tex­ture? Lastly, will it look beau­ti­ful? We do after all eat with our eyes. This sweet, vanilla cheese­cake with tart, crunchy, cool granita ac­cented with fresh berries and edi­ble flow­ers ticks ev­ery box. On pa­per at least, this dish should be per­fect. Serves: 6
