Recipe to roll up for the lunch box
HOME-made energy balls are a fun and easy cooking activity and are a great addition to your school lunch box. Ingredients 300g dried apricots 110g toasttoastedt unsalted macadamiasa macada (swap for sultans sultan or dates) 1 tbsp coconut oil pinch of
cinnamon pinch of salt 1 tbsp golden syrup (or use honey or maple syrup instead) How to make:
Combine the apricots, nuts, oil, cinnamon, salt and syrup in a food processor or blender. Blitz until well combined.
Roll one tablespoon of the mixture into a ball and set aside on a plate or tray lined with baking paper.
Repeat with the rest of the mixture then place in the fridge or freezer to firm up.
Roll the balls in desiccated coconut if desired.
* These balls will keep in the fridge for one week and the freezer for up to three months.
