SPICY FRUIT SLICE

INGREDIENT­S

2 cups sliced tropical fruit 1 cup desiccated coconut 2 cups sliced macadamia nuts

2 cups stale wine

1 cup grape-seed oil

2 cup coconut sugar

3 eggs

4 cups wholemeal plain flour 1 tsp salt 2 tsp bicarb soda

2 tsp cinnamon powder 2 tsp nutmeg powder 1 tsp all spice powder 1 tsp clove powder

METHOD 1

Combine fruit and wine in a saucepan, simmer for five minutes. Allow to cool.

2 Stir oil into fruit mix. Add eggs to a bowl, beat slightly, add sugar and stir into fruit mix.

3 Sift together all dry ingredient­s, fold into fruit mixture.

4 Line a Lamington pan, pour in fruit mix. Bake in a moderate oven for 20 minutes. When cool cut into slices and dust lightly with icing sugar.
