Salt flakes and freshly ground black pepper 6g curry leaves

200g red onion, sliced 20g finely chopped garlic

15g finely chopped ginger 35g Sri Lankan black curry powder

16g chilli powder

1 ½ pickled limes, pulp removed, skin cut into medium fine dice

30g grated coconut

12g fine rice flour

30g tomato paste (concentrat­ed puree) 10g caster sugar

Juice of 1-2 limes
