MOORE EXCELLENT Soup weather is here and this classic Italian-style version is perfect for those chilly nights 1⁄4 1⁄3 Heat one tablespoon of the oil in a stockpot over a medium heat. Add onion, carrot, garlic and rosemary. Cook, stirring, until soft. Add stock and tomatoes. Bring to boil. Simmer, covered, for 10 minutes. Trim leaves from kale, discarding stems. Finely shred. Add to soup with beans. Simmer for a further 3-5 minutes. Season. Meanwhile, place bread on an oven tray. Drizzle with remaining oil.
