THE St Ge­orge Bak­ery has proven that bak­ing fine morsels is a piece of cake af­ter tak­ing out a num­ber of awards at the Toowoomba Royal Bak­ing Show.

Their vanilla slice and sponge cake took top gongs while their lam­ing­tons came home in third place.

It was the first time Trent Chal­lenger, who owns the bak­ery along­side wife El­iz­a­beth, had en­tered a bak­ing com­pe­ti­tion, choos­ing one of Aus­tralia’s big­gest to make his mark.

“It’s a pop­u­lar show and has stiff com­pe­ti­tion from a lot of the bak­eries who take it pretty se­ri­ously,” he said.

The judges re­sponded well to Trent’s cake-mak­ing abil­i­ties.

“They said the con­sis­tency of the cus­tard in the vanilla slice is some­thing they hadn’t seen be­fore and it’s over­all size was sym­met­ri­cal.”

The judges also re­served spe­cial praise for the sponge cake, giv­ing it top marks for its den­sity and tex­ture.

Trent says prac­tice makes per­fect when it comes to bak­ing.
