Cherry choco­late bars

IF you’re a fan of the Cherry Ripe choco­late bars, why not make your own? I’ve been told these are bet­ter than the bought ones.


4x 100g pack­ets of glazed cher­ries

5x cups of des­ic­cated co­conut

1x tin of con­densed milk 1x tea­spoon of vanilla essence

Red food colour­ing 30g of copha

3 cups of choco­late melts


In a mixer or a blender com­bine:

Glazed cher­ries Des­ic­cated co­conut Con­densed milk Vanilla essence

And enough red food colour­ing to get the pink/red colour.

Stir re­ally well un­til com­bined and sticky.

Place a log shape on a lined bak­ing tray and make into any shape you like – balls, stars, bars etc.

Pop in the freezer for an hour. When hard, com­bine the copha and choco­late melts.

Zap in the mi­crowave for one minute on high then give a good stir.

Dip cherry bars into the choco­late mix us­ing ke­bab skew­ers and place into a lined stor­age con­tainer.

Re­frig­er­ate un­til eaten.
