SEA­SONED PALMER STREET RESTAU­RANT As restau­rants. a chef, Christ­mas When does is a busy your fam­ily day in most cel­e­brate the main fes­tive meal?

Hav­ing a large Ital­ian fam­ily, pre­dom­i­nantly liv­ing in the Cairns/Port Dou­glas re­gion, we usu­ally make the trip up there to one of our fam­ily mem­ber’s houses which usu­ally changes ev­ery year, with ev­ery­one tak­ing turns to host the Christ­mas fes­tiv­i­ties.

Tell us about your fam­ily’s fes­tive feast?

Be­ing trop­i­cal North Queens­land we of­ten find our­selves hav­ing a large fam­ily lunch, then re­lax­ing in the af­ter­noon around the pool with a few re­fresh­ing bev­er­ages. Is it al­ways up to you to pre­pare the big fes­tive meal at home?

Ev­ery­one has their spe­cial­i­ties that they like to bring which makes the day as stress free as pos­si­ble for ev­ery­one es­pe­cially the host that year.

What’s your ideal Christ­mas meal to pre­pare?

As fresh seafood is al­ways my favourite part of an Aus­tralian Christ­mas, I nor­mally or­gan­ise and bring fresh prawns , bugs and oys­ters with a few home­made sauces as well. Pre­sented as a beau­ti­ful seafood plat­ter cen­tre­piece, it’s a win­ner.

Your favourite Christ­mas treats?

The rest of the Christ­mas lunch spread al­ways con­sists of a roast tur­key and pork with all the trim­mings , roast veg­eta­bles , stuff­ings with gravy and, of course, the cran­berry sauce. Also you will find ham on the bone with a va­ri­ety of sal­ads.

One of my favourite Christ­mas treats is our amaz­ing range of fresh and ripe stone fruits, peaches and nec­tarines are by far my favourite. What is the dish that your fam­ily keep want­ing to see on the ta­ble?

Christ­mas sweets, choco­late truf­fles, rum balls , white Christ­mas and a fam­ily favourite pane­tonne (Ital­ian sweet Christ­mas bread).
