SEASONED PALMER STREET RESTAURANT As restaurants. a chef, Christmas When does is a busy your family day in most celebrate the main festive meal?
Having a large Italian family, predominantly living in the Cairns/Port Douglas region, we usually make the trip up there to one of our family member’s houses which usually changes every year, with everyone taking turns to host the Christmas festivities.
Tell us about your family’s festive feast?
Being tropical North Queensland we often find ourselves having a large family lunch, then relaxing in the afternoon around the pool with a few refreshing beverages. Is it always up to you to prepare the big festive meal at home?
Everyone has their specialities that they like to bring which makes the day as stress free as possible for everyone especially the host that year.
What’s your ideal Christmas meal to prepare?
As fresh seafood is always my favourite part of an Australian Christmas, I normally organise and bring fresh prawns , bugs and oysters with a few homemade sauces as well. Presented as a beautiful seafood platter centrepiece, it’s a winner.
Your favourite Christmas treats?
The rest of the Christmas lunch spread always consists of a roast turkey and pork with all the trimmings , roast vegetables , stuffings with gravy and, of course, the cranberry sauce. Also you will find ham on the bone with a variety of salads.
One of my favourite Christmas treats is our amazing range of fresh and ripe stone fruits, peaches and nectarines are by far my favourite. What is the dish that your family keep wanting to see on the table?
Christmas sweets, chocolate truffles, rum balls , white Christmas and a family favourite panetonne (Italian sweet Christmas bread).
