BANQUETING SOUS CHEF, ANTHONY DOYLE
THE PAVILION THE VILLE RESORT-CASINO Is it always up to you to prepare the big festive meal at home?
When I’m off for Christmas my family and I pick one item each to cook and prepare, with us being a large family it makes it a feast.
Tell us about your family’s festive feast?
We usually have prawns and bugs then, of course, the turkey, the pork, the lamb and the ham with all the trimmings. It really is a feast leaving you in an absolute food coma.
What’s your ideal Christmas meal to prepare?
I love doing honey baked ham then, of course, rum balls to finish it off.
Your favourite Christmas treats?
I love my rum balls and a good Christmas pudding with a nice brandy custard is always good. Three things (food wise) that it wouldn’t be Christmas without?
Got to have the ham, the turkey and it’s just not Christmas without the Christmas pudding and rum balls. What do you do to make your family’s Christmas meal special?
Definitely in the special honey glaze I make for the ham it just turns out perfect. What is your top tip for the Christmas meal for families who prefer not to spend hours in the kitchen?
Get your family involved. Get all the prep done and ready the day before so on the day you just pop it in the oven and enjoy a lovely family day. What is the dish that your family keep wanting to see on the table?
Would have to be Mum’s amazing trifle, an absolute winner every year.
