INGREDIENT­S

• 2 tbs butter

• 1 large onion, finely chopped • ⅓ cup plain flour

• 300ml full-cream milk • 300ml water

• 1 cup tasty cheese, grated • 425g canned tuna, drained • 125g canned corn

• Salt and pepper to taste

• 1 tsp lemon juice

• 1 pinch nutmeg

• 1 tsp parsley

• ½ cup shell-shaped pasta

• 1 cup cornflake crumbs

SERVES 4. PREP 25 MINS. COOK 45 MINS.

METHOD O

1 Melt butter in a pan and saute onion until soft.

2 Add flour and gradually add milk and water to form a sauce.

3 Add cheese, tuna and corn.

4 Season with salt, pepper, lemon juice, nutmeg and parsley.

5 Cook pasta, according to packet directions, and add to sauce.

6 Pour sauce mixture into casserole dish, sprinkle cornflake crumbs on top and bake at 200C for 20 minutes.

MELBOURNE will be hit hardest by David Jones’ decision to close some of the premium food stores it launched only a few years ago, the company’s South African owners have revealed.

Other food stores will be scaled back, with a shift to a better offer online to stem the losses from the venture.

Roy Bagattini, the recently appointed chief executive of South Africa’s Woolworths Holdings, the owner of David Jones, carried through on a promise to address the losses being racked up by the David Jones Food Hall concept, with the changes announced on Monday.

David Jones will close two stand-alone food stores in Melbourne — Capitol Grand, in South Yarra and one in Malvern Central, southeast of the city — in April and May respective­ly.

And following a dive in foot traffic in the Melbourne CBD due to COVID-19, David Jones will bring forward the previously announced closure of the Bourke St food hall to next month, ahead of the retailer’s exit from the building in April 2022. A new food offering is scheduled to be opened in the Bourke St womenswear store next year.

David Jones declined to provide the number of jobs involved in the closures, but the department store operator said it was looking to redeploy staff where possible.

But the restructur­e of David Jones’ food business will not derail the convenienc­e partnershi­p with petrol station chain BP, which will continue across 35 locations.

The wider David Jones Food Hall concept has struggled since it launched, losing $12m in the recent half.

At David Jones’ first-half results presentati­on last week, Mr Bagattini repeated his focus on fixing the food business to reduce its losses.
