As the first restaurant in Denmark to take out three Michelin stars, Geranium has firmly positioned itself on the map of the world’s best and most sought-after dining destinations. At the helm is chef Rasmus Kofoed, the only chef in the world to have won three awards from the Bocuse d’Or, one of the most prestigious culinary competitions. Kofoed’s innovative and modern take on Scandinavian dining has taken it to refreshing new heights with an organic and environmentally driven ‘Universe’ menu, which changes with the seasons. Consisting of a whopping 20-plus courses, which can be matched with three different types of wine pairings or a juice pairing, it’s a lengthy affair, yet every dish is light, delicate and exquisitely plated. Occupying the eighth floor of the National Football Stadium in Faelledparken, Copenhagen’s largest park, the restaurant’s location and views emphasise its menu, showcasing the contrast between urbane and natural. There is also a walk-through wine cellar, a meat room where meats are cured and pickled, and a large open-kitchen, where the theatrics of the culinary team can be watched in awe.
