As the first restau­rant in Den­mark to take out three Miche­lin stars, Gera­nium has firmly po­si­tioned it­self on the map of the world’s best and most sought-after din­ing des­ti­na­tions. At the helm is chef Ras­mus Ko­foed, the only chef in the world to have won three awards from the Bo­cuse d’Or, one of the most pres­ti­gious culi­nary com­pe­ti­tions. Ko­foed’s in­no­va­tive and mod­ern take on Scan­di­na­vian din­ing has taken it to re­fresh­ing new heights with an or­ganic and en­vi­ron­men­tally driven ‘Uni­verse’ menu, which changes with the sea­sons. Con­sist­ing of a whop­ping 20-plus cour­ses, which can be matched with three dif­fer­ent types of wine pair­ings or a juice pair­ing, it’s a lengthy af­fair, yet ev­ery dish is light, del­i­cate and exquisitely plated. Oc­cu­py­ing the eighth floor of the Na­tional Foot­ball Sta­dium in Faelled­parken, Copen­hagen’s largest park, the restau­rant’s lo­ca­tion and views em­pha­sise its menu, show­cas­ing the con­trast be­tween ur­bane and nat­u­ral. There is also a walk-through wine cel­lar, a meat room where meats are cured and pick­led, and a large open-kitchen, where the the­atrics of the culi­nary team can be watched in awe.
