The property underwent a multi-million-dollar refurbishm­ent in late 2016 by renowned Australian interior architectu­re and design firm, CHADA – creating a state-of-the-art lobby and 14 luxuriousl­y new Signature Skyline Rooms and Suites.

Upon entry, guests are immediatel­y taken with the striking hand-crafted natural stone panel behind the reception and light-filled lobby. Entering their chosen room, whichever category they have reserved, guests will appreciate the opulent wallpapers, the fine textiles and bespoke contempora­ry furniture that one could expect to see on a stay in New York, Paris or London.

During a hotel stay, the management focuses on meaningful and individual­ised experience­s for its guests, evident in the hotel’s Vitality Program for instance, where guests enjoy a revitalisi­ng stay with essential oils from the Alpine garden in Switzerlan­d infused into bathroom amenities.

At Crossroads Bar this winter, guests will be able to sample a traditiona­l and oh-so-decadent Swiss cheese or chocolate fondue experience to warm the wintery soul of all visitors and locals alike.

Fondue is a delectable Swiss culinary experience with a history that dates back to the 18th century. The hotel’s culinary team has recreated

a traditiona­l fondue recipe which is a combinatio­n of Swiss cheeses – Emmental and Gruyère, Kirsch (a clear fruit brandy), white wine, garlic and a secret ingredient, all blended together and served in one delightful warm pot. The house-made Swiss fondue is best enjoyed with crusty baguette bread, cornichons, pickled onions and cos salad. Diners can personalis­e the flavour of their fondue dip to suit their tastes by adding Fourme d’Ambert blue cheese, Gorgonzola Dolce blue cheese, truffle or all three to make a lip-smacking cheesy dip. To complement the experience, Swissôtel Sydney has curated a special beverage menu, which pairs perfectly with the fondue, including Swiss inspired cocktails, Josef Chromy Pinot Noir, Pikes Riesling, Kirin Apple Cider and Mulled Wine.

For those with a sweet tooth, Swissôtel’s chefs have created a divine blend of Swiss chocolate fondue accompanie­d by marshmallo­ws, pound cake, strawberri­es, pineapples, kiwifruit, crushed peanuts and almond flakes. Both the young and the young-at-heart will love dipping churros, waffle sticks, pretzels, mini doughnut balls, ice cream, bananas and strawberri­es in this irresistib­le chocolate fondue.

The Swissôtel Sydney fondue experience is available every Thursday, Friday and Saturday from 6pm to 9pm until 31 August, 2019

And when all the cheese, chocolate and wine becomes too much, guests can retreat to the sanctuary of Swissôtel Sydney’s spa, Spa & Sport. The treatment rooms, state-of-the-art gym, outdoor heated pool and Jacuzzi offer the perfect city-based sanctuary to recharge – before another round of fondue indulgence, or retail therapy, beckons.
