Ice-cream plum pud­ding with spiced poached cher­ries and bit­ter cho­co­late

Serves 6 Plum pud­ding

6tbsp sliv­ered al­monds, toasted

3 dessert spoons chopped maraschino or glacé cher­ries

2 dessert spoons each of sul­tanas, dried mango ½ tsp each of ground cin­na­mon, nut­meg, gin­ger

1tbsp each of Ir­ish cream liqueur, Coin­treau

120g bit­ter cho­co­late 70% co­coa, melted (melt in a bowl over hot water or in a mi­crowave on a low set­ting)

1L good qual­ity, vanilla bean ice-cream

Sliced poached cher­ries

500g cher­ries, stones re­moved

500ml water

125g caster sugar

Pinch of ground all­spice and ground gin­ger

1 star anise

1 cin­na­mon stick, split in half length­ways ½ vanilla bean, split in half, beans scrapped out
