THIS lit­tle meal is a great one for lunches or a light din­ner.

The cheesi­ness is what makes it de­li­cious.

I mean what’s not to like about chicken and cheese?

Th­ese are es­pe­cially good cold the next day and our kids re­ally love them in their school lunch­box.


■ 1kg of chicken breasts or thigh

■ 2 eggs

■ Ap­prox 1⁄2 cup of may­on­naise

■ 2 cups of moz­zarella cheese

■ 2 ta­ble­spoons of dried dill

■ A pinch of salt

■ Pep­per to taste

■ 1⁄3 cup of flour

■ Oil (ap­prox half a cup) METHOD

Cut up the raw chicken breast or thigh into small bite-size pieces.

Place into a mix­ing bowl and add in the re­main­ing in­gre­di­ents. Stir well un­til com­bined.

An elec­tric fry­ing pan is par­tic­u­larly good to fry th­ese in. Use a fair bit of oil.

Once the pan is hot, spoon the mix­ture in with a soup la­dle and push down like a patty/ris­sole.

Brown on ei­ther side re­ally well. Mak­ing sure the chicken is thor­oughly cooked.

Con­tinue the process un­til the mix­ture is gone and place on a paper towel on a plate to drain off the ex­cess oil.

Serve hot or cold.
