I feel like chicken...
THIS little meal is a great one for lunches or a light dinner.
The cheesiness is what makes it delicious.
I mean what’s not to like about chicken and cheese?
These are especially good cold the next day and our kids really love them in their school lunchbox.
■ 1kg of chicken breasts or thigh
■ 2 eggs
■ Approx 1⁄2 cup of mayonnaise
■ 2 cups of mozzarella cheese
■ 2 tablespoons of dried dill
■ A pinch of salt
■ Pepper to taste
■ 1⁄3 cup of flour
■ Oil (approx half a cup) METHOD
Cut up the raw chicken breast or thigh into small bite-size pieces.
Place into a mixing bowl and add in the remaining ingredients. Stir well until combined.
An electric frying pan is particularly good to fry these in. Use a fair bit of oil.
Once the pan is hot, spoon the mixture in with a soup ladle and push down like a patty/rissole.
Brown on either side really well. Making sure the chicken is thoroughly cooked.
Continue the process until the mixture is gone and place on a paper towel on a plate to drain off the excess oil.
Serve hot or cold.
