HALOUMI HASSELBACK BROCCOLI
Move over potato, broccoli is the new star of the hasselback scene. Stuffed with haloumi and roasted with flavour-packed dukkah, it’s a vego side everyone will love.

INGREDIENTS
1 head (about 400g) broccoli
100g haloumi, cut into 1cm thick slices 1 tbsp olive oil, plus extra to serve
2 tsp dukkah
METHOD Step 1:
Preheat oven to 200C/180C fan forced. Line a baking tray with baking paper. Trim the base of the broccoli to sit flat. Wash under cold running water. Place in a heatproof bowl. Cover. Microwave on high for 21/2 minutes or until tender. Set aside for 5 minutes to cool slightly.
Step 2:
Use a sharp knife to cut 3 slits through broccoli, taking care not to cut all the way through. Place a piece of haloumi into each slit. Drizzle with oil. Season. Bake for 20 minutes or until golden. Sprinkle with dukkah. Bake for a further 5 minutes. Serve drizzled with extra oil.
