RE­LAX IN STYLE at Brix Dis­tillers. Brix is a fully op­er­a­tional 24/7 dis­tillery and rum age­ing fa­cil­ity. Helmed by ex­pe­ri­enced dis­tiller Shane Casey, Brix of­fers an ex­clu­sive range of White, Gold and Spiced rums. In ad­di­tion to the ex­clu­sive rums, you can en­joy more than 150 in­ter­na­tion­ally sourced rums along­side a bou­tique se­lec­tion of craft beers and wines. En­joy a ca­sual din­ing menu from Columbian chef Ivan Sanchez that ex­pertly bal­ances South Amer­i­can flavours which bring out the unique char­ac­ters of the rums. The ad­join­ing in­dus­trial-style open kitchen and bar is de­signed by Am­ber Road, an award-win­ning in­te­rior de­sign firm, and in­te­grates the open space of the dis­tillery into the raw aes­thetic with pops of colour. Ev­ery hour a ‘rum trol­ley’ roams the bar en­cour­ag­ing you to try an ex­cit­ing se­lec­tion of rums so that you can dis­cover your favourite style.
