PORK WITH CHORIZO & BEAN COUSCOUS
■ Serves 4, prep 15 mins, cook 8 mins
WHAT YOU NEED
8 pork loin steaks (800g)
CHORIZO & BEAN COUSCOUS
1 tbsp olive oil
1 chorizo, halved lengthways, thinly sliced
1 onion, halved, thinly sliced
2 cloves garlic, crushed
200g green beans, trimmed, cut into 1cm pieces
2 tsp smoked paprika
½ cup ajvar (paprika relish)
2 cups chicken stock
1½ cups couscous
1 To make couscous, heat oil in a large saucepan over a medium heat. Add chorizo, onion and garlic. Cook, stirring occasionally, for about 3 minutes, or until onion is soft.
2 Stir in beans, paprika and 2 tbsp of the ajvar. Add stock. Bring to boil. Stir in couscous. Remove from heat. Stand, covered, for 5 minutes. Fluff with a fork.
3 Meanwhile, season pork with salt and pepper.
4 Heat an oiled, large, nonstick frying pan over a medium to high heat. Add pork in two batches. Cook for about 2 minutes on each side, or until cooked to 5 your liking. Remove.
5 Serve pork with couscous and remaining ajvar.
