PORK WITH CHORIZO & BEAN COUS­COUS

WHAT YOU NEED

8 pork loin steaks (800g)

CHORIZO & BEAN COUS­COUS

1 tbsp olive oil

1 chorizo, halved length­ways, thinly sliced

1 onion, halved, thinly sliced

2 cloves gar­lic, crushed

200g green beans, trimmed, cut into 1cm pieces

2 tsp smoked pa­prika

½ cup aj­var (pa­prika rel­ish)

2 cups chicken stock

1½ cups cous­cous

1 To make cous­cous, heat oil in a large saucepan over a medium heat. Add chorizo, onion and gar­lic. Cook, stir­ring oc­ca­sion­ally, for about 3 min­utes, or un­til onion is soft.

2 Stir in beans, pa­prika and 2 tbsp of the aj­var. Add stock. Bring to boil. Stir in cous­cous. Re­move from heat. Stand, cov­ered, for 5 min­utes. Fluff with a fork.

3 Mean­while, sea­son pork with salt and pep­per.

4 Heat an oiled, large, non­stick fry­ing pan over a medium to high heat. Add pork in two batches. Cook for about 2 min­utes on each side, or un­til cooked to 5 your lik­ing. Re­move.

5 Serve pork with cous­cous and re­main­ing aj­var.
