CHAR SIU PORK WITH BROWN RICE

Serves 4, Prep 10 mins, Cook 6 mins WHAT YOU NEED

1 bunch broccolini 300g cup mushrooms 450g packet family-size microwavea­ble brown rice 1 tblsp vegetable oil 500g pork mince

3 cloves garlic, crushed 1 tblsp finely grated fresh ginger 1⁄₃ cup char siu sauce 1 tblsp soy sauce 4 green spring onions, cut into 3cm lengths

Trim broccolini. Cut crossways into thirds. Cut mushrooms into 2 thick slices. Heat rice according to packet 3 directions. Meanwhile, heat oil in a large wok over a high heat. Add pork, garlic and ginger. Stir-fry, breaking up mince, for about 3 minutes, or until browned. 4 Add mushrooms and broccolini to pork in wok. Stir-fry for a further 3 minutes, or until just tender. Add combined sauces. Bring to boil. Stir in onions. Remove from 5 heat. Serve char siu pork and vegetables with rice.
