Beef with Mixed Mushrooms and Sesame

INGREDIENTS
500g beef stir-fry strips 2 tsp cracked black pepper 2 tbsp vegetable oil 1 onion, thinly sliced 3cm fresh ginger, peeled, finely grated
2 garlic cloves, crushed 300g mixed mushrooms, halved 1 red capsicum, seeded, sliced ¼ cup Chinese (Shaoxing) cooking wine
2 tbsp soy sauce
1 tbsp oyster sauce
1 tsp sesame oil Steamed rice, shredded green onion, toasted sesame seeds, to serve
METHOD
1 In a bowl, toss beef with
2 pepper. Set aside. In a wok or large frying pan, heat oil on high. Stir-fry beef in 2 batches, 1-2 minutes each until browned.
3 Remove from pan and set aside. In same wok, heat remaining oil on high. Stir-fry onion, ginger and garlic 1-2 minutes until tender. Add mushrooms and capsicum. Stir-fry 3-4 minutes until just tender. Stir in combined sauces. Stir-fry 1-2 4 minutes until heated through. Return beef to pan with sesame oil. Stir-fry 1-2 minutes to heat through. Serve on a bed of steamed rice, topped with shredded green onion and toasted sesame seeds.
