BOTTOMS UP!

I joined a wine club in the Hunter Valley, Thomas Allen wines, during a weekend trip there a few years ago and it’s become a Friday night treat to pop a bottle of their sparkling red – aptly named The Boss. It’s fruity and fun and best served icy cold with some camembert and crackers – ideal for those virtual trivia nights with friends. Now the weather is warming up, I’ve started making frozen margaritas. I use Casamigos Reposado Tequila (two standard shot glasses), Continenta­l Triple Sec (one shot), the juice of three limes and a tablespoon of sugar syrup (if that’s too tart, just add a dash more). I blend it all with a large handful of ice and serve. I also dance to ‘Despacito’ while making it and pretend I’m on a tropical island – whatever gets us through, right?

We’ve been drinking some Bundaberg ginger beer in the evenings on AFDs (alcohol-free days). Inspired by the beer, we googled a recipe for a ginger beer cocktail and – voila – the ginger beer margarita was fabulous and super-easy! Mix Patrón tequila, lime, simple syrup, shake and pour over ice. Top up with ginger beer, salt-rim the glass and add a wedge of lime. It’s all about using good glasses and sitting somewhere nice.

I’m a sucker for routine and after a busy work week, I can’t wait to pour myself a gin and kombucha with a wedge of lime come Friday afternoons. A new combo that mixes my fave beverages – my best friend got me onto it! – I add ice, Gordon’s pink gin and Remedy Wild Berry Kombucha. It’s sweet and satisfying!

My partner and I meet at the pub (lounge room) every night after we log o from work. At the moment I’m loving a South Australian preservati­vefree pinot noir The Hero of Zero. On the past few weekends, with the weather being so lovely and summery, I splurged with some Grey Goose vodka mojitos. To save myself some time, I juice the mint and lime together, add the vodka, sugar syrup and top with soda water and serve over ice. It’s delicious!

Saturday afternoons have become happy hour at our family home. Craving cocktails but too lazy to make one myself, I discovered Cipriani White Peach Bellini at the local bottle shop. It’s delicious, and I’m obsessed with the pretty bottle, too!
