THE JENNIFER SALAD

Jennifer Aniston is famous for her salads, even inventing a take on the classic Cobb which she and co-stars Courteney Cox and Lisa Kudrow ate daily on the set of Friends. Aniston has since shared a variation she calls her “perfect salad”. Of course I couldn’t resist trying it out! The star is the bulgur, which tastes like a cross between couscous and brown rice and is high in magnesium, manganese, iron, vitamin B1 and zinc. Aniston shared the ingredient­s but not the quantities, but the version I made tasted pretty good. It was also easy to make – a definite thumbs up from me!

INGREDIENT­S (Serves 2)

⁄ cup dry bulgur (I used the fine brown variety from Duru Bulgur) ⁄ medium red onion chopped 1 tbsp mint chopped

2 tbsp parsley chopped

80g crumbled feta

200g drained canned chickpeas 1 cucumber chopped Handful of pistachios

METHOD

Cook bulgur according to the packet directions. Allow it to cool slightly then toss with other ingredient­s. Add salt and pepper if you wish, and serve.
