CREAMY PRAWN LINGUINE

In a medium saucepan, cook 375g fettuccine in boiling salted water, following packet instructio­ns. Drain well and return to pan. Cover. Meanwhile, in a large frying pan, heat 1 tbsp olive oil on medium. Saute 1 sliced red onion, 1 crushed garlic clove and ½ tsp dried chilli flakes 1-2 minutes, until tender and fragrant. Toss 250g green prawn meat (500g unpeeled) and 250g halved tomatoes through. Cook 2-3 minutes, until prawns begin to change colour. Increase heat to high and add ¼ cup dry white wine. Cook, stirring, 30 seconds until almost evaporated. Pour in ½ cup cream and simmer 2-3 minutes, until prawns are cooked. Toss sauce through hot pasta. Serve topped with dill and shaved parmesan, if liked.
