PINK SWIRL MARSHMALLO­W POPS

Line a 10 x 20cm loaf pan with baking paper. Using an electric mixer, beat 1 cup caster sugar, ⅓ cup cold water and 1 tsp vanilla 30 seconds. In a jug, dissolve 1½ tbsp gelatine in ⅓ cup boiling water. Beat into sugar mixture 5 minutes, until fluffy. Dot a little pink food colouring over marshmallo­w and swirl. Pour into pan. Evenly insert 8 pop sticks. Set at room temperatur­e. Using a hot, sharp knife, cut marshmallo­w into pops. Drizzle with melted milk chocolate.
