PINK SWIRL MARSHMALLOW POPS
MAKES 8 PREP 15 MINS
Line a 10 x 20cm loaf pan with baking paper. Using an electric mixer, beat 1 cup caster sugar, ⅓ cup cold water and 1 tsp vanilla 30 seconds. In a jug, dissolve 1½ tbsp gelatine in ⅓ cup boiling water. Beat into sugar mixture 5 minutes, until fluffy. Dot a little pink food colouring over marshmallow and swirl. Pour into pan. Evenly insert 8 pop sticks. Set at room temperature. Using a hot, sharp knife, cut marshmallow into pops. Drizzle with melted milk chocolate.
