HOT CROSS BUN & BUTTER PUDDING

SERVES 8 PREP 10 MINS + 20 MINS STANDING TIME COOK 40 MINS

300ml thickened cream

300ml milk

6 eggs, beaten

¾ cup caster sugar

1 tsp vanilla extract

6 hot cross buns

cream, to serve

1 In a large mixing bowl, combine cream, milk, eggs, sugar and vanilla extract.

2 Cut hot cross buns in thirds crossways.

3 In a 20 x 25cm baking dish, arrange slices of bun to cover base. Pour over egg mixture to just cover slices. Add another layer of bun slices and cover with egg mixture again. Place last of bun slices on top. Pour remaining egg mixture evenly into dish. Stand 20 minutes before baking to allow custard to soak into bun.

4 Preheat oven to 180°C. Bake pudding 40 minutes. Remove from oven and serve warm, with cream.
