HOW TO: Make toffee
1. In a small saucepan, heat 1 cup caster sugar and ⅓ cup water together on low, stirring, until sugar has dissolved.
2. Increase heat to high and bring to boil. Boil, not stirring, brushing down sides of pan with a pastry brush to avoid crystals.
3. Continue boiling 6-7 minutes, until golden and hard ball stage (121-129°C) is reached by testing with a sugar thermometer.
