350g potatoes, peeled, diced 425g can tuna in spring water, drained, flaked ½ cup panko crumbs ¼ cup parsley, chopped 3 green onions, chopped 1 egg, whisked 2 tbsp baby capers, drained, chopped juice 1 lemon 2 tbsp olive oil 4 hamburger buns, split, toasted mayonnaise, sliced tomato, lettuce leaves, pickled onions, to serve

1 In a medium saucepan, place potatoes and cover with water. Bring to the boil on high and cook 15 minutes until tender. Drain. Mash well until smooth. Transfer to a large bowl. Cool. 2 Add tuna, crumbs, parsley, onion, egg, capers and lemon juice, mixing well. Season to taste. Form into four patties. Arrange on a plate. Chill 30 minutes until firm. 3 In a large frying pan, heat oil on medium. Cook patties 5-6 minutes each side until golden and cooked through. Drain on paper towel. 4 Top buns with mayonnaise, patty, tomato and lettuce, and accompany with pickled onions.
