BAKED GREEK MEATBALLS

500g lamb mince 1 small red onion, finely chopped 1 cup fresh breadcrumb­s ¼ cup finely chopped parsley 2 tbsp chopped oregano leaves 1 tbsp finely chopped mint leaves 1 egg 4 garlic cloves, crushed 2 tbsp olive oil 2 x 400g cans diced tomatoes 200g feta, crumbled grilled flatbread, lemon wedges, to serve

1 Preheat oven to moderate, 180°C. 2 In a bowl, combine mince, onion, breadcrumb­s, herbs, egg and garlic. Season and mix well. Shape 2 tbsp mixture into balls. 3 In a large ovenproof frying pan, heat oil on medium. Cook meatballs in two batches, 3-4 minutes each, until browned. Return all meatballs to pan with tomatoes and bring to the boil. 4 Sprinkle with feta. Bake 20-25 minutes until sauce thickens and cheese is golden. Serve with flatbread and lemon wedges.
