BREKKY SALAD D 70%
Preheat oven to 180°C and line a baking tray with baking paper. Put 3 bacon rashers on the tray and bake 12-15 minutes until crisp. Cool briefly, then break into large pieces. Bring a saucepan of lightly salted water to the boil,, then reduce to a simmer. Stir thehe water in a circular mmotion, thenn gently crack two eggeggs into the pan. Poach 2-3 minutesminu for softt yolks. Remove the eeggs and place gently on a papaper towel. Arrange 1 cup torn icebergi lettuce, handful rocrocket leaves, ¼ sliced avocado, 5 halved cherryerry

In a saucepansau over medium heat, melt 1 tbsp p coconut oil and stir in 2-3 tbsp laksa paste. Adadd 400g tin coconut cream aand 1 ½ cups water. Bring to boil, thenn reduce to a simmer. Add 2 dicedced free-range chicken tthigh fillets,ts, ½ small head broccolibrocco cut intoo florets, and large hahandful greenen beans cut into 4cm pieces. Simmer 5 minutes uuntil chicken is cooked. In a separateseparat saucepan, cook 80g soba or riceric noodleses
10% ACHOCOLATECHOC E PUDDINGSPUDD
Preheapreheat oven too 180°C. Grease four ramekins wwith butter or coconut oil and dustt with flour. Place in frifrfridge. In a heatproof bowl oover a saucepan of water, mmelt 100gg good-quality dark chocolatecho and 100g butter. Set aaside. Putut 2 free-range eggs, 2 free-frerangee egg yolks and 70g raw or coconutonut sugar in the bowlbo of an electric mixemixer. Beat with whisk attachmentatta on medium untilu mixture is pale aand holds its shape.shap Reduce speed tto low, add 100g aalmond meal aand slowly tomatoes and bacon on a plate. Place eggs and ¼ cup shredded parmesan on top. Season. Drizzle with 1 tsp balsamic vinegar and 2 tsp extra-extra virgin olive oil. accordingdi to packetk didirections.i Drain and add to laksa. Garnish with bean sprouts, coriander and chilli and serve with lime wedges. iincrease speed dt to mediumdi until til well combined. Add chocolate mixture slowly. Mix until smooth. Pour into ramekins. Bake 13-14 minutes or until puddings spring back when pressed. Scatter with coconut flakes. Serve with a dollop of cream or coconut yoghurt and fresh berries.
