HEARTY CHILLI CORN & BACON SOUP

SERVES 4 PREP 10 MINS COOK 30 MINS PER SERVE 2630kj COST PER SERVE $1.80

2 tbsp olive oil 200g rindless bacon, thinly sliced 270g jar chargrille­d capsicums, drained, diced 1 red onion, diced 2 garlic cloves, crushed 35g sachet chilli spice mix 1 tbsp smoked paprika 3 cups chicken stock 535g can sweet potato and pumpkin soup 400g can corn kernels, drained 400g can black beans, rinsed, drained sour cream, sliced avocado, coriander leaves, toasted baguette, to serve

1 In a large saucepan, heat oil on medium. Saute bacon 6-8 minutes until crispy and golden. Remove using slotted spoon, reserving fat in pan. Drain on paper towel. 2 In same pan, saute capsicum, onion, garlic, spice mix and paprika. Cook, stirring, 4-5 minutes until softened. 3 Add stock, soup, corn and beans. Simmer 10-15 minutes. Season. Serve topped with sour cream, avocado, reserved bacon and coriander. Accompany with baguette.
