Speedy chicken meals Delish!
SERVES 4 PER SERVE 2103kj COST $$$
2 cups long-grain white rice 1 cup firmly packed fresh mint leaves ⅓ cup sweet chilli sauce 1 tbsp fish sauce 1 tbsp soy sauce ½ cup lime juice 2cm piece fresh ginger, grated 2 x 10cm sticks fresh lemongrass, finely chopped 4 x 170g chicken breast fillets 1 small red capsicum, seeded, finely chopped
1 Cook rice in large saucepan of boiling water, uncovered, until just tender. Drain. 2 Meanwhile, coarsely chop 2 tbsp of mint and reserve. Blend or process remaining mint with sauces, juice, ginger and lemongrass until smooth. 3 Cook chicken in batches on heated oiled grill plate or barbecue, until browned both sides and cooked through. 4 Toss capsicum through cooked rice. Divide among serving plates and top with chicken. Drizzle with sauce. Sprinkle with reserved mint.
