Speedy chicken meals Del­ish!

2 cups long-grain white rice 1 cup firmly packed fresh mint leaves ⅓ cup sweet chilli sauce 1 tbsp fish sauce 1 tbsp soy sauce ½ cup lime juice 2cm piece fresh gin­ger, grated 2 x 10cm sticks fresh lemon­grass, finely chopped 4 x 170g chicken breast fil­lets 1 small red cap­sicum, seeded, finely chopped

1 Cook rice in large saucepan of boil­ing wa­ter, un­cov­ered, un­til just ten­der. Drain. 2 Mean­while, coarsely chop 2 tbsp of mint and re­serve. Blend or process re­main­ing mint with sauces, juice, gin­ger and lemon­grass un­til smooth. 3 Cook chicken in batches on heated oiled grill plate or bar­be­cue, un­til browned both sides and cooked through. 4 Toss cap­sicum through cooked rice. Di­vide among serv­ing plates and top with chicken. Driz­zle with sauce. Sprin­kle with re­served mint.
