How to make doughnuts at home

In the bowl of an electric mixer, combine 2 cups bread flour,2 eggs, ⅓ cup warm water, 2 tbsp sugar, 2 tsp dried yeast and 1 tsp salt on low.

Knead with dough hook 5 minutes. Beat in 75g chilled chopped butter, 1 cube at a time, until smooth.

Prove 1 hour until doubled. Punch dough down.

Roll out on floured surface to 1cm thick. Cut out 6cm rounds, then 2cm centre holes. Cover and prove a further 45 minutes.

Deep-fry doughnuts 30-40 seconds each side until puffed and golden. Drain on paper towel. Toss in combined 1 cup caster sugar and ½ tsp cinnamon.
