This week’s Masterchef guest judge Yotam Ottolenghi reveals his top tips on how to spice up your lamb

“I’d make a shawarma and spice mix using cumin, cinnamon, coriander seeds, turmeric and paprika to make it both sweet and a bit smokey. Mix it up with crushed fresh ginger, chopped coriander and lemon juice, and rub it over some lamb. Leave it to marinate for as long as you can. It’s the most delicious thing on the barbecue!”
