1 bunch coriander, chopped, plus extra leaves to serve 2 garlic cloves, crushed 3 tsp ground cumin grated zest, juice 1 lemon 8 chicken thigh fillets, trimmed

1 In a small food processor, pulse coriander, garlic, cumin and lemon zest and juice with a splash of oil until smooth. Season to taste. 2 In a non-metallic bowl, combine chicken and coriander mixture, turning to coat. Cover, chill at least 30 mins. 3 Preheat a greased barbecue or chargrill plate on high. Cook chicken pieces 4-5 mins each side, until grill marks appear and chicken is cooked through. 4 Serve chicken on a bed of couscous, scattered with extra coriander leaves. Accompany with shredded cabbage salad, if liked.
