RECIPE

2 tbsp extra-ra-virgin olive oil 1 medium onion, chopped d 5 medium carrots, sliced 6 celery stalks, sliced 2 tbsp minced garlic 1 tsp chopped fresh thyme me 1 tbsp kosherher salt or sea salt 1 tsp freshlyly ground black pepper per 1 bay leaf 10 cups low-w-sodium chicken broth oth 2 cups cookedked wide egg noodles es 2½ cups darkark and white shredded meat from barbecue chicken 1 In a large saucepan, heat oil over medium-high heat. 2 Add onion and cook, stirrinsti­rring,g, until softened, for 6-8 mins. 3 Add carrots, celery,ly garlic, thyme, salt and pepper, and cook, stirring, until the carrotsts soften slightly, for about 5 mins.ins. 4 Add the bay leaf and chickechic­ken broth, bringg to a boil. Reduce the heaheat and simmerr 45 mins to meld the flavours. 5 Sstir in noodles and chicken, and simmsimmer soup 5-10 mins longer. 6 Seasonsea to taste. Discard bay leaf. Ladle into bowls to serve.
