SMOKY WHITE BEAN, CHORIZO & CABBAGE CASSEROLE

SERVES 4 PREP 15 MINS COOK 30 MINS PER SERVE 2045kj COST $$

1 tbsp extra-virgin olive oil 2 chorizo sausages (see tip), chopped 1 large onion, finely chopped 2 x 400g cans cannellini beans, rinsed, drained 1 tsp each sweet and smoked paprika 1 ½ cups vegetable stock ½ small green cabbage, roughly chopped 4 fresh bay leaves 60g bag baby spinach leaves 1 long red chilli, sliced roasted kumara wedges, to serve

1 In a large flameproof casserole dish, heat oil on medium. Brown chorizo 3-4 mins until golden. 2 Add onion and saute 2-3 mins until tender. Stir cannellini beans and paprikas through. 3 Add stock, cabbage and bay leaves. Bring to boil. Reduce heat to medium. Simmer, covered, 10-12 mins. Add spinach and simmer, uncovered, 10-12 mins until slightly thickened. 4 Sprinkle casserole with sliced red chilli. Serve with kumara wedges.
