LIME & PASSIONFRUIT SYRUP CAKE

SERVES 10 PREP 10 MINS COOK 25 MINS

Preheat oven to moderate, 180°C. Lightly grease and line a 10 x 20cm loaf pan with baking paper. In a bowl, using an electric mixer, cream 185g softened butter and ¾ cup caster sugar together until creamy. Add 3 eggs, one at a time, beating well after each addition. Mix in 1 tsp finely grated lime zest. Lightly fold in 1 ¼ cups self-raising flour with 2 tbsp water until combined. Spoon mixture into pan, smoothing top. Bake 20-25 mins until golden and cooked when tested. Cool in

pan 5 mins.
