Skip the scrambled eggs for brunch and try the latest Instagram foodie sensation

Preheat oven to very hot, 220°C. Line an oven tray with baking paper. In a clean, dry bowl, use an electric mixer to beat 2 egg whites with a pinch of salt and pepper until stiff peaks form. Quickly and lightly fold in 1 tbsp grated cheddar, 2 tsp finely chopped parsley and 1 very finely chopped green onion. Form into two nest shapes on baking tray and bake 5 mins. Carefully slide a yolk into each recess. Bake a further 2 mins. Serve on sourdough toast with baby spinach leaves and smoked salmon.
