Lemon delicious pudding

1 Preheat oven to 180°C. Lightly brush four small ramekins with 30g melted butter. 2 Using an electric mixer, beat 60g softened butter and 1 cup caster sugar until well combined. Add ¼ cup self-raising flour and zest of 2 lemons, stirring lightly to just combine. 3 In a jug, whisk ⅔ cup lemon juice, ⅔ cup milk and 3 egg yolks together. Stir into creamed mixture. In a clean bowl, beat 3 egg whites until soft peaks form. Using a large metal spoon, gently fold whites through batter. 4 Place ramekins in baking dish and spoon batter evenly among ramekins. Pour enough hot water into dish to come up halfway. Bake 20-25 mins until set in centre. Dust with icing sugar and se serve with thick cream.
