The science goal of the diet is to make fat from fatty acids into your body’s fuel source, instead of it using glucose.

It aims to put your body into nutritiona­l ketosis, which means it uses stored fat instead of glucose as fuel. “The foundation of the diet is that we can cause our body to burn greater amounts of fat by decreasing its use of glucose, which comes from carbohydra­tes,” says Keto diet expert Jennifer Williams. “It’s the function of the pancreas and the liver to regulate the fuel supply to the body. And the fact is the liver and pancreas prefer to generate this fuel supply from glucose.”
