MAC & CHEESE POTS

20g butter 2 tbsp plain flour 3 cups low-fat milk 250g cherry tomatoes, halved 100g baby spinach leaves
cup pitted black olives 4 green onions, sliced 1 tbsp coarsely chopped parsley leaves 250g macaroni, cooked according to packet instructions ½ cup grated reduced-fat tasty cheese 50g reduced-fat feta, crumbled
1 Preheat oven to hot, 200°C. Arrange 4 ovenproof gratin dishes on an oven tray.
2 In a large saucepan, melt butter on medium. Add flour and cook, stirring, 1 min. Remove from heat, stir in milk until smooth. Return to heat and cook, stirring, until sauce boils and thickens. Reduce heat to low and simmer 3 mins. Season to taste.
3 Add tomatoes, spinach, olives, onion and parsley to sauce. Heat, stirring, 3-5 mins. Stir cooked pasta and cheese through. Preheat grill to high.
4 Divide mixture between gratin dishes. Sprinkle with feta. Bake 6-8 mins until cheese is golden and mixture is heated through.
