Make the most of deliciousel de in-season produce while wh w it’s at its budget best
TUSCAN BRAISED LEEKS & FISH SERVES 4 PREP 10 MINS COOK 20 MINS PER SERVE 1594kj
2 tbsp olive oil 1 leek, washed, sliced into 1.5cm rounds 1 red capsicum, seeded, chopped 2 garlic cloves, crushed 1 fresh long red chilli, seeded, finely chopped ½ cup dry white wine 400g can diced tomatoes 4 x 200g firm white fish fillets ¼ cup pitted kalamata olives parsley leaves, lemon wedges, crusty bread, to serve
1 Preheat oven to moderate, 180°C.
2 In a deep, ovenproof frying pan, heat oil on medium. Cook leek, capsicum, garlic and chilli 5 mins.
3 Add wine to deglaze pan. Simmer, covered, 2 mins until leeks are tender. Add tomatoes and bring to a simmer.
4 Place fish in pan and nestle into sauce to come halfway up the sides. Season. Scatter with olives. Bake 8 mins, until fish flakes when tested.
5 Scatter with parsley leaves and serve with lemon wedges. Accompany with crusty bread.
