BANANA PANCAKE STACK MAKES 10 PREP 10 MINS COOK 10 MINS

In a bowl, whisk 1 cup ricotta, 1 egg and 2 tbsp caster sugar together. Whisk in 1 cup milk and 1 tsp vanilla, then 1 cup sifted self-raising flour. Brush a non-stick frying pan with a little butter and heat on medium. In 3 batches, cook ¼ cup of batter 2 mins each side until golden and cooked through (see tip). Stack on a plate and keep warm. Wipe pan with paper towel between batches, brush with more butter. CHARGRILLE­D BANANAS Meanwhile, heat a chargrill pan on high. Brush 3 sliced bananas with a little melted butter. Chargrill 2-3 mins each side until marks appear. In a bowl combine 2 cups Greek-style yoghurt, 1 tbsp honey and ½ tsp ground cinnamon. Stack pancakes with yoghurt and chargrille­d bananas. Drizzle with extra honey to serve.
