HALOUMI, APPLE, KALE & QUINOA SALAD

SERVES 6 PREP 15 MINS COOK 5 MINS 4 cups cooked quinoa 1 bunch kale, finely chopped ¼ red cabbage, shredded 2 green apples, cored, thinly sliced ½ cup pepitas 2 limes ¼ cup extra-virgin olive oil 750g haloumi, 1cm slices

1 In a large bowl, combine cooked quinoa with kale, cabbage, apple and pepitas.

2 Gradually stir in juice of 1 lime and oil. Season to taste with salt and pepper.

3 Preheat a chargrill pan, barbecue plate or frying pan on high. Cook haloumi about 1 min each side until golden.

4 Halve remaining lime and cook about 30 secs until grill marks appear. Add haloumi to salad and serve straight away with lime.
