STICKY SOY & SRIRACHA DRUMSTICKS

SERVES 4 PREP 20 MINS + MARINATING COOK 35 MINS PER SERVE 3655kj

½ cup sriracha ½ cup honey ¼ cup soy sauce 2 tbsp rice wine vinegar 8 chicken drumsticks kecap manis, to serve

FRIED RICE

1 chorizo sausage, finely chopped 150g shiitake mushrooms, thinly sliced 6 green onions, thinly sliced 1 garlic clove, crushed 500g packet microwave jasmine rice, cooked following packet instructio­ns

1 Preheat oven to hot, 200°C. Lightly grease and line an oven tray.

2 In a large non-metallic bowl, whisk sriracha, honey, soy and rice wine vinegar together. Add chicken, turning to coat. Set aside 20 mins to marinate.

3 Arrange chicken on tray. Bake 30-35 mins, turning half way, until caramelise­d and cooked through.

4 FRIED RICE Meanwhile, heat a wok or large frying pan on high. Stir-fry chorizo 3-4 mins until golden. Add mushrooms, onion and garlic and stir-fry 1-2 mins until tender. Stir rice through until well combined and hot.

5 Serve whole or shredded chicken with rice, drizzled with kecap manis, if liked.
