POTATO, SWEDE & SAUSAGE GRATIN

1 tbsp olive oil 1 onion, finely chopped 500g Italian-style pork sausages, meat removed from casings 1 bunch purple kale, sliced 500g desiree potatoes, peeled, sliced thinly 500g swedes, peeled, sliced thinly 300ml tub cream 1 cup milk 3 eggs 3 slices prosciutto ½ cup grated parmesan

1 Preheat oven to moderate, 180°C. Lightly grease an 8-cup rectangula­r casserole dish. Place on an oven tray (see tip).

2 In a large frying pan, heat oil on medium. Saute onion 2-3 mins until tender. Add sausage meat, saute 4-5 mins until brown, breaking up lumps. Stir kale through. Remove from heat. Season.

3 In a large saucepan of boiling salted water, blanch potato and swede 1 min, until water returns to the boil. Drain, rinse under cold water. Pat dry on paper towel.

4 Layer 1/ potato and swede in dish. Sprinkle over 3 half meat mixture. Repeat layers twice, finishing with a potato and swede layer.

5 In a large jug, whisk cream, milk and eggs together. Season. Gently pour over potato layer.

6 Cover with lightly greased foil. Bake 45 mins. Remove foil. Top with prosciutto and sprinkle with parmesan. Bake, uncovered, 10-15 mins until prosciutto is crispy. Accompany with steamed vegetables or salad if liked.
