MEDITERRAN­EAN CHICKEN

800g chat potatoes, halved if large 8 chicken thighs on the bone, skin on 3 tsp sweet paprika 2 red onions, quartered 2 red capsicums, seeded, sliced 1 yellow capsicum, seeded, sliced 4 garlic cloves, crushed ¼ cup olive oil 1 tbsp chopped oregano 400g can diced tomatoes 20 pitted black olives 150g feta, crumbled 2 tbsp chopped parsley 1 Preheat oven to hot, 200°C.

2 Place potatoes in a large saucepan of water and bring to the boil on high. Boil for 5 mins. Drain.

3 Dry chicken pieces with paper towel and trim any excess fat. Place the chicken in a large baking dish. Sprinkle with paprika, rubbing in all over.

4 Add onion, capsicum, garlic and potatoes. Pour oil over vegetables, sprinkle with the oregano and season well. Bake 30 mins.

5 Mix in tomatoes and olives. Bake a further 10-15 mins until chicken is cooked through.

6 Sprinkle feta and parsley over the chicken before serving.
