MIDDLE EASTERN-STYLE WARM SALAD

SERVES 4 PREP 10 MINS COOK 10 MINS PER SERVE 2583kj COST $$$$$

250g packet pearl couscous ½ cup instant couscous 1 tbsp olive oil 2 celery stalks, plus leaves, sliced 1 tbsp Moroccan seasoning 2 cups cooked cauliflowe­r florets (or other vegies) ¼ cup chopped dried apricots 2 tbsp currants 1/ cup chopped almonds 3 1 tsp finely grated lemon zest ¼ cup coriander leaves lemon wedges, to serve DRESSING ½ cup natural yoghurt 2 tbsp tahini finely grated zest, juice 1 lemon

1 Cook both couscous following packet instructio­ns. Set aside.

2 In a large frying pan, heat oil on medium. Saute celery and seasoning 2 mins until fragrant.

3 Add cauliflowe­r, dried fruit and couscous. Cook, stirring, 2-3 mins until heated through. Season.

4 DRESSING In a small bowl, combine all ingredient­s. Season.

5 Serve salad on a large platter topped with nuts and lemon zest. Sprinkle with coriander leaves. Drizzle with dressing. Accompany with lemon wedges.
