CHOW MEIN NOODLES
SERVES 6 PREP 10 MINS COOK 15 MINS PER SERVE 1950kj
400g packet udon noodles ¼ cup oyster sauce 2 tbsp soy sauce 2 tsp brown sugar 1 tbsp vegetable oil 1 onion, thinly sliced 2 tsp grated fresh ginger 2 garlic cloves, crushed 500g minced beef 450g packet frozen stir-fry vegetables, defrosted 3 cups shredded wombok 4 green onions, thinly sliced, green ends reserved, to garnish
1 Place noodles in a large heatproof bowl. Cover with boiling water. Soak 1 min, then gently separate with a fork. Drain well.
2 In a small bowl, combine sauces and sugar. Set aside.
3 In a wok, heat oil on high. Stir-fry onion 3 mins. Mix in ginger and garlic, cook 30 secs. Add beef and cook 5 mins, breaking up any lumps.
4 Add vegetables and sauce mixture and stir-fry 3-4 mins until heated through and sauce is reduced. Toss wombok, green onion and noodles through, to heat.
5 Serve noodles tossed with extra shredded green onion.
